Our Philosophy

Shimane's first
all-junmai brewery.

Deep in the Chugoku Mountains, in Akana, Iinan, Shimane. Following a large-scale renovation by the town of Iinan in 2014, Akana Sake Brewing now brews nothing butShimane's first all-junmai breweryjunmai, junmai ginjo and junmai daiginjo.

The rice is grown mainly in Iinan, a region known for fine sake rice, and the brewing water comes from the same town. No distilled alcohol is ever added: only rice, rice koji and water, drawing out the rice's own full-bodied umami. The name “Kinunomine®” comes fromMt. Kinugasaby the brewery, where the mist looked like silk.

The Craft

Our CraftFrom Rice to Sake

Rather than changing the process for each type of sake, we follow the same steps for every one. From washing the rice to storing the sake, we treat it as gently as we can.

01

Polishing the rice

Sake rice grown mainly in Iinan, polished to 40–60% depending on the label, removing the coarse flavours of the outer layers.

02

Making the koji

All our koji is made by hand. Koji mould is sprinkled over steamed rice, turning the rice's umami into sugar.

03

Brewing

We use the clear water rising in Kamakana, Iinan, as brewing water. The mash is brewed carefully, with limited water absorption throughout.

04

Pressing and storing

Everything is pressed in a fune, and our −10°C Fine Cold System keeps the sake delicious all year round.

Shimane's First

−10°C Fine Cold System™

Introduced in December 2017, the first among sake breweries in Shimane. The freshness of the sake right after pressing is kept at −10°C until shipping.

All-Junmai

Shimane's first all-junmai brewery

In November 2014 we became a brewery making only junmai, junmai ginjo and junmai daiginjo. No distilled alcohol is ever added.

All LED

All-LED lighting in the brewery

Also in November 2014, we became the first sake brewery in Shimane to switch all its lighting to LED, supporting consistent quality control.

Our Story

Our HistoryA Century of Brewing

1929

Founded

Under the government's policy of strengthening small sake producers, three nearby breweries (Tochigi Den'ichiro, Kiyohara Tsuneshiro and Yakai Renosuke) merged to found Akana Sake Brewing Gomei Kaisha. Tochigi Den'ichiro of Kijima, Iinan, who provided much of the funding, became its first representative partner (president). The brand used by Yakai Renosuke, Kinunomine®, became the flagship.

2004

Town ownership

The brewery prospered as a subcontractor for major makers thanks to its high technical skill, but changes in the sake market brought financial difficulty. The town of Akagi (now Iinan) bought the brewery buildings and land, making them town property.

2014

Akana Sake Brewing Co., Ltd. founded: a new start

A new management team acquired the shares and founded Akana Sake Brewing Co., Ltd. The ageing brewery was extensively renovated by the town of Iinan into a sanitation facility meeting international standards, and opened in November. It became the first in the prefecture with all-LED lighting and all-junmai brewing.

2017

Overseas expansion and cold storage

In October we opened an office in Bangkok, Thailand: the first for a sake brewery in Japan. In December we introduced the −10°C Fine Cold System, the first in Shimane.

2022

10,000 bottles exported

Exports, interrupted by the pandemic, resumed, and cumulative exports reached 10,000 bottles since the company was founded. A ceremony was held at our shop.

2025

Mini Nominone™ launched; Tripadvisor award

In January we released “Mini Nominone™”, a 100ml bottle shaped like a 1.8L sake bottle. In July we received the Tripadvisor Travellers' Choice Award 2025.

2026

Tripadvisor award for a second year; Food Sanitation Excellence Award

In April we received the Tripadvisor Travellers' Choice Awards 2026 for the second year running. We were also recognised for our daily hygiene management with the Shimane Food Sanitation Association's Food Sanitation Excellence Award, presented to only two companies in Shimane.

Frequently Asked QuestionsQuestions & Answers

What kind of sake is Kinunomine®?
Kinunomine® is the flagship sake of Akana Sake Brewing in Akana, Iinan, Shimane. The name is said to come from the mist on Mt. Kinugasa near the brewery, which looked like silk. We brew junmai, junmai ginjo and junmai daiginjo.
Why is Akana's junmai sake so good?
Akana Sake Brewing adds no distilled alcohol at all. We brew with sake rice grown mainly in Iinan, water from the same town, hand-made koji and gentle fune pressing. The −10°C Fine Cold System, the first in the prefecture, keeps the sake fresh, so the rice's full umami and a clean finish come together.
Can I buy your sake overseas?
Yes. Akana Sake Brewing began exporting in 2016 and opened an office in Bangkok, Thailand in October 2017. We export to Thailand and other markets, and in 2022 we reached 10,000 bottles exported since our founding.
What is the difference between sake and junmai?
Sake is the general name for Japanese alcohol made from rice, rice koji and water. Junmai refers only to sake with no distilled alcohol added. Akana Sake Brewing brews only junmai, junmai ginjo and junmai daiginjo: Shimane's first all-junmai brewery.
Where can I buy Kinunomine®?
